Karaage is bite-size Japanese fried chicken seasoned with a soy sauce, sake, ginger, and garlic marinade and fried until golden. Learn how to achieve perfectly crispy yet juicy pieces every time!
Put the chicken pieces, soy sauce, sake, garlic, ginger in a ziplock bag and seal it. Rub them all together and leave it for at least 20 minutes.
Drain the marinated liquid of chicken and dust the chicken pieces with Katakuriko (potato starch).
Heat the oil in a deep frying pan or a frying pan to 180°C(356°F) and cook the chicken pieces until golden brown.
Serve with rice, salad leaves, and a lemon wedge.

*1 100 % potato starch or 50% Potato starch and 50% rice starch. Or you can use store bought Karaage mix by following the package directions.*2 You need about 500 ml oil but only about 30ml oil will be absorbed in the process. So the nutritional fact is calculated based on 30ml of cooking oil.
