Simple and delicious authentic Japanese Udon noodle soup with Tempura Shrimp. If you can access ready-made udon noodle packet, Tempura shrimp, and dashi, this delicious Japanese noodle can be cooked under 15 minutes. However, you can make all of them from scratch. It takes time, but the Tempura udon is truly worth your effort because it will be more delicious.
Heat Dashi in a saucepan over medium heat and add soy sauce and mirin.
Bring to boil and turn the heat off and set the soup aside.
Udon Noodle
Boil enough water (not listed in the ingredients list) in a large pot and add the Udon noodles. Cook according to packet's instructions becasue this varies depending on whether you use dry or frozen. *7
Drain the cooked udon noodles and serve into the two bowls.
Pour the Udon soup over the udon.
Top with 2 Tempura shrimps and 2 slices of Naruto fish cake.
Garnish with chopped shallots and sprinkle a little bit of shichimi togarashi if you like a little bit of spice.

*1 To make Dashi from scratch, read about Dashi here. I recommend using Niboshi Dashi. If you can access the instant Udon noodle soup packets, empty the packets into a noodle bowl and pour 1 cup of hot water to make Udon soup. *2 If you don't have soy sauce, it can be substituted with coconut aminos. Read more about other options of Japanese food substitutions*3 If you don't have mirin, substitute with 1tbsp dry sherry + 1tsp sugar. *4 One pre-made store-bought Udon noodle packet generally weighs about 4 oz (120 g).
