  • 1 cup self raising flour
  • 1/4 cup caster sugar
  • 65 g butter chopped
  • 1/4 cup of milk
  • 1 egg
  • 1 tbs cocoa


  • 1 block of cream cheese approx. 250g
  • 1/2 cup icing sugar
  • 2 tbs matcha powder
  • 150 ml whipped cream very cold


  • Preheat the oven to a 180c and leave the cream cheese out to become room temperature.
  • Sift the flour and sugar into a large bowl and then rub in the butter with your fingertips.
  • Combine the milk and egg in a jug and mix with a fork.
  • Add the milk and egg mixture to the dry ingredient mixture.
  • Mix together with a fork until all ingredients are just combined, avoid over-mixing (it should be coarse and lumpy).
  • Add the mixture evenly into a mini muffin pan.
  • Bake for 20 minutes then remove from oven and set aside on a wire rack to cool.
  • While the muffins cool, prepare the matcha frosting.
  • Beat the cream cheese in a large bowl with an electric mixer until it is soft and creamy.
  • Shift the icing sugar into the cream cheese and matcha powder and beat again until all mixed together.
  • Add very cold whipped cream and beat all together until fully mixed and soft peaks form.
  • Put the finished frosting into a piping bag and swirl in circular motion on top of mini muffins to create a Christmas tree.
  • Top with sprinkles, etc. to create Christmas tree appearance then serve!
