Mentsuyu is a flavourful and multipurpose Japanese sauce/soup base that can be made easily at home with just 5 ingredients!

Ingredients
1cupMirin*
¼cupSake
5cmKombu kelp strip
20gBonito flake
1cupSoy sauce
Instructions
Place mirin and sake in a medium sized pot to let the kombu soak in the liquid ingredients to release its umami flavours.
Put the pot over medium heat, once it's boiled turn the heat down and simmer for 5 minutes over low heat.
Add bonito flakes (katsuobushi) and simmer for a further one minute. *2
Turn the heat off and let it cool down.
Pour soy sauce into the saucepan.
Using a fine-mesh strainer lined with a kitchen paper towel, strain out all solids from the mentsuyu into another clean container to keep.
Notes
*1 mirin and soy sauce ratio is 1:1, adjust sweetness by adding sugar.*2 do not boil as it will cause fishy smell. *3 this will make about 2 cups of concentrate mentsuyu.*4 Dipping tsuyu, add equal amount of water or up to double amount of water depending on your liking.*5 Kaketsuyu, dilute with one part to three parts of water.
