Ingredients
2lbUme plum fruits
1lbRock sugar*1
8cupsLiquor*2
Instructions
Soak plum fruits in water for 3 hours.
Stylise the glass jar by boiling or wipe with spirits or alcohol wipes and set aside.
Wash the plum fruits thoroughly under running water.
Remove excess water off the plum fruits by gently tapping the fruits.
Remove the stem ends with a toothpick or a bamboo skewer.
Place rock sugar and ume plum fruits alternately in layers into the glass jar.
Pour the liquor of your choice into the glass jar.
Put the lid on and leave it at a cool place where no direct sunlight for minimum 6 months.
Notes
*1 You can adjust the amount of rock sugar between 1-1.8lb (500-800g) depends on how sweet the plum wine will be. *2 Choose liquor that has above 35% alcohol content such as vodka, rum, gin etc. *3 The nutritional value is for a whole jar. *4 I used 350 g of plum, 280g of rock sugar, and 700ml vodka.
