In this post, I will explain how to make a special Japanese sandwich. Well, two actually. These are my take on Japanese sandwiches that people in Los Angeles are becoming obsessed with. Konbi’s Layered egg omelette sandwich and the Egg salad sandwich. No wonder they quickly gained popularity because Japanese sandwiches are mouth watering delicious!
Konbi’s Japanese sandwich
I am counting down to visit the U.S.A. and Konbi in Los Angeles to eat those Japanese sandwiches in September. Konbi is a restaurant serving Japanese sandwiches and people in L.A. seem to not be able to get enough of Konbi’s egg salad sandwich. No wonder really, if they are serving Japanese sandwiches similar to the egg salad sandwiches available in Japan.
What is so special about a Japanese sandwich?
The Bread
Japanese egg salad sandwiches are made with special white bread. Shokupan is a milk bread loaf often referred to as Hokkaido milk bread. We call them “Shokupan” which is one of the popular recipes on Chopstick Chronicles. They are soft and fluffy and stay moist for longer because of the Yudane method. I explain this more in-depth in the Shokupan recipe post.
The egg filling
- Chopped eggs – Boil eggs and chop them with a special gadget “Stainless Steel Wire Egg Slicer“. The chopped egg is finally mixed with Kewpie mayo, scallions, salt and pepper. OR
- Egg omelette – It is called “Atsuyaki Tamago” in Japanese.
Making perfect eggs
For the egg salad sandwich, eggs need to be cooked perfectly, neither overcooked nor undercooked. And for the omelette, using the special egg rolling pan is good for shaping the omelette thick and square. However, you may not have one of these special pans, or simply not used to using them. For those who are a little hesitant to make a Japanese rolled omelette, there is good news for you. It is possible to use a microwave. Furthermore, if you have the special egg rolling pan, I have a video which shows how to do it.
Making a Japanese rolled omelette with a microwave
Firstly, prepare a microwave proof square container. Crack eggs in and add seasonings as well. Now only stir them briefly. Now, this is important. When cooking eggs in a microwave they can become spongy if overmixed initially. Microwave for 1 minutes 30 seconds on 500w. Remove the container and give it stir. Then microwave it further 30 seconds. All microwaves are different so you need to find the best timing for your microwave. Finally, remove the eggs over aluminium foil and wrap them. Due to the residual heat, the eggs will continue to cook.
Does it have to be Kewpie Japanese mayo?
People often ask me this question. My standard answer is always, YES! I recommend using Japanese mayo if possible. Because Japanese mayonnaise is made from egg yolk and rice vinegar unlike ordinary mayonnaise made from whole egg and white vinegar. Adding Japanese mayonnaise keeps the egg soft and fluffy.
How to make a perfect boiled egg for a Japanese sandwich?
Leave eggs in room temperature beforehand. It avoids cracking and makes the shell removal easier. Add eggs with a ladle into boiling water and roll the eggs sometimes to make the yolk stay in the centre. Cook for 9 minutes. I recommend using a timer to time exactly 9 minutes. Then take the eggs out of boiling water using a ladle again. Above all, place them in a bowl of cold water. It will stop the eggs from cooking further.

Japanese egg salad sandwiches
Ingredients
- 8 slices Shokupan *1
- 1 tbsp Japanese mayonnaise *2
- 1 tbsp margarine
- 1 tsp Japanese mustard (optional)
Egg salad
- 3 eggs (left in room temperature)
- 1 tbsp Japanese mayonnaise
- 1/2 tbsp milk
- 1 tbsp chopped scallions
- pinch of salt and pepper to taste
Egg omelette
- 3 eggs
- 1 tsp dashi powder
- 1 tbsp water
- 1 tbsp milk
- 1 tbsp Japanese mayonnaise
Instructions
Egg salad sandwich
- Bring water to boil in a saucepan over high heat.
- Add eggs gently one by one with a ladle. and turn the heat down to middle.
- Set a timer for 9 minutes.
- After 9 minutes, remove the eggs with a ladle and place them into a bowl of cold water.
- Remove shell. Cut one egg in half and set aside.
- Place two eggs into a mixing bowl and squash them with a folk.
- Add chopped scallions to the bowl.
- In a separate bowl, mix mayonnaise and milk. Add it to the egg bowl.
- Combine all together.
- Place two slices of bread on a chopping board.
- Mix Japanese mayonnaise, margarine, and mustard. Spread it thinly over the bread.
- Place the egg cut in half on the centre of a slice of bread and topped with 1/2 of the egg salad mixture.
- Place the other bread on top of the egg salad to sandwich.
- Cut it in half to serve.
Egg omelette *3
- Crack the eggs into a heat proof square container which is same size of the bread. *4
- Add dashi powder, water, milk and mayonnaise and mix them breifly.
- Microwave it for 1.5 min on 500w.
- Remove the container from the microwave and give it a stir.
- Put it back into the microwave and cook on same for 30 seconds.
- Flip the egg over a sheet of aluminum foil and wrap it to leave for 3 minutes to settle.
- Place two slices of bread on a chopping board.
- Spread the mayonnaise, margarine and mustard mixture thinly over the bread.
- Place the egg omelette on one bread.
- Top with another bread on egg omelette to sandwich.
- Cut it in half to serve.
