Mochi waffle, or “moffle”, is a tasty and fun way to eat mochi. The soft rice cake is pressed in a waffle maker to create that signature waffle shape to create a chewy mochi centre with a crispy crust. From miso caramel to matcha ice cream; the topping combos are endless, so you’ll be sure to have a delicious Moffle in the end!

What is Mochi Waffle?

Mochi Waffle is a Japanese-born mock waffle made from mochi toasted in a waffle maker or waffle iron. It is also known as Moffle (モッフル) in Japan, and is often served as dessert but depends on the toppings. With the right toppings, this waffle can also be savoury. Mochi is made from Mochigome (mochi rice) so it does not have much taste or flavour. When mochi is cooked in a waffle maker or waffle iron, the outside of the waffle is crispy like a rice cracker, but inside still has the chewy mochi-like texture.

Why You Will Love This Mochi Waffle?

  • Because if you have access to commercially made mochi, you can just pop it in a waffle maker and press it. You can have delicious Moffles in less than 5 minutes.
  • Let your imagination run wild, for the topping possibilities are endless. I will share my ideas in this post.
  • Moffle also looks pretty in white, if you carefully select the toppings. Mochi itself is gluten-free and vegan friendly.

What Do I Need?

You only need ONE ingredient; Mochi rice cake. You can buy commercially made individually packaged mochi packets from Japanese or Asian grocery stores or from online stores. Or you can challenge yourself and make Mochi from scratch with my mochi recipe. Also, you can use rice flour which is the same flour used to make Mitarashi Dango, three coloured hanami dango, and Shiratama Dango.

How to Make Mochi Waffle?

If you use commercially made mochi, simply remove mochi from plastic packet, and pop it in a waffle maker. The mochi is a little hard so initially, you will not be able to close the waffle maker. Wait a minute or so and then press it, cook both side over high heat for 2 minutes each.

How to Serve?

Savoury: you can serve your Moffles with grated Daikon radish, soy sauce, shiso leaves and nori seaweed flake. Also, you can press the waffle with cheese and bacon bits.
Sweet: Serve the Moffles with any flavoured ice cream such as Matcha ice cream and Black sesame ice cream. Why any flavoured? Because mochi does not have much flavour. Drizzled with Kuromitsu, Miso Caramel, Honey, maple syrup etc.

Variations of Mochi Waffles

Mochiyomogi mochi, or mochi with matcha flavour, daifuku mochi, can be used.

Toppings – Grated daikon, shiso leaves, seaweed flakes, cheese, bacon bits, and soy sauce miso butter for savoury. Miso caramel, any flavoured ice cream, whipped cream, anko sweet red bean paste, Kinako soybean powder, honey, kuromitsu, maple syrup, jam for sweet flavouring.

What to Serve With?

Simply with Hojicha. Hojicha will be good to be served with both savory and sweet flavoured toppings. Matcha latte will be great with mochi waffle with sweet flavoured toppings. And same as Oshiruko the sweet red bean soup with mochi, Tsukemono such as nukaduke or pickled daikon, pickled daikon and carrot, pickled ginger are my favourite sides to eat with.

Q: How to make Moffles from scratch?

Q: Can you make them ahead and store them?

A: No, unfortunately, once mochi is cooked, it will harden with time. So it is best served fresh. If you made too much and have leftovers, best to be heated up in warm liquid like miso soup to make Ozoni miso soup, or put in udon noodle soup or ramen.

Equipment

  • Waffle maker/Waffle Iron

Ingredients

  • 2 mochi *1

Making mochi dough from glutinous flour

  • 1/2 cup glutinous rice flour
  • 3 tbsp water
  • 2 tsp sugar *2

Suggested Toppings : Savoury

  • 1/4 cup grated daikon *3
  • 1/2 tbsp soy sauce *4
  • a leaf Shiso *5
  • 1 tsp roasted sesame seeds

Suggested Toppings : Sweet

  • 1 scoop ice cream (any flavour) *6
  • 1 tbsp anko sweet azuki bean paste *7
  • 1 tsp kuromitsu *8

Instructions

Using commercially made Mochi

  • Start to preheat waffle iron on high heat.
  • Remove plastic packages from the Mochi and place them on the pre heated waffle iron.
  • Press the waffle iron after about one and half minutes and leave it pressed for a further 30 seconds.
  • Turn the waffle iron over and cook the other side for 2 minutes.
  • Remove mochi waffles from the waffle iron and serve on a plate.
  • Top with your chosen ingredients.

*1  Two individually packed commercially made mochi. If you are going to make your own mochi from sweet mochi rice, see my How to make mochi recipe. 
*2 I used “Shiratamako” I bought from a local Japanese grocery store. It had an after taste even though it listed only sweet rice as ingredient. So I added sugar to disguise the taste.
